2018 T-Rex



T-Rex is styled after the Super Tuscans, the great wine blends of Tuscany. T-Rex celebrates the Rex Family’s Italian heritage and our winemaker’s art.

Winemaker's Notes

Sangiovese has a strawberry flavor that focuses on the center of your palate. We accentuated this strawberry essence with small amounts of six additional varieties. Malbec gives the blend a touch of Blackberries and fills in the bottom of the taste profile. Syrah fills in the bottom with an earthy foundation. Zinfandel accentuates the mid-palate as it expands like a super nova in the middle of your mouth, like putting the strawberries on steroids. Merlot adds nose and brings the strawberry essence forward. Cabernet Sauvignon gives the blend a longer finish and greater structure. The Cabernet Franc adds a dark chocolate note and takes all the flavors to the top of your palate.
The final blend not only accentuates the Sangiovese but fills every corner of your palate, giving you a greater sensation of fullness and fruitiness than the Sangiovese can do on its own. It is a symphony in a bottle and a perfect example of our winemaking art form.
We barrel aged the individual components in our barrel cave for 36 months in a combination of American and French oak barrels, of which about 25% were new. After constructing the blend by taste we barreled the blend down for another few months, 35 months total in the barrel, aged and tended to monthly in our cave at Deerfield Ranch Winery.
T-Rex will pair with almost any food and particularly sings with Italian fare, be it spaghetti with a tomato sauce or clams in a cream sauce. It’s good by itself. Sometimes we just have it for dinner.
The 2018 Vintage was the seventh very good vintage in a row, which is a really long run for mother nature. This T-Rex is superb now and will age well for at least 15 years from vintage date. Remember that when a wine ages it loses fruit and gains complexity.

At bottling: Alc. 15.3%. pH 3.7, T.A. 6.1 g/L R.S. 0.5 g/L. Cross flow clarified before bottling, sterile bottled, Velcorin free. SO2 at bottling 18 ppm, at release: less than 12 ppm. Histamines < 5 ppm. Unfined. Vegan. Bottled 330 cases, August 2020.
