The 2007 Cove Cuvee was blended by taste from specially selected barrels from the individual lots to produce a richly structured blend that reaches every corner of the palate. The Cabernet creates the framework affecting flavors from front to back, ending in a long lingering finish. The Syrah fills in the bottom of the palate, grounding the wine and giving it extra affinity to food pairing. The Merlot give the blend aromatics and a good nose, the front of the palate. Cabernet Franc takes the flavors high in palate, giving the flavors lift and headiness. The Malbec fills in the lower back of the palate and adds a subtle blackberry flavor and Petit Verdot fills in the lower front, like a touch of spice or cedar. Extended barrel aging softened the tannins. The resultant marriage of flavor profiles fills every corner of the palate creating a harmonious taste sensation that leaves nothing out of place, everything in perfect balance, a tour de force of Deerfield winemaker’s art. This Vegan wine was barrel aged for 30 months.
