The Peterson Vineyard is in Kenwood, the heart of Sonoma Valley. It’s slightly warmer than the coastal regions so the wines are fuller and richer. We accentuate this quality by fermenting this S.B. in neutral oak barrels that have no oak flavor left, having been used for a few years in the Chardonnay program. The barrel still influences the wine by an interchange of compounds that softens and broadens the taste of the wine. This Peterson Vineyard S.B. is our favorite with crab and other shellfish. It’s almost Chardonnay-like in its richness yet has the crisp edge that makes Sauvignon Blanc such a versatile wine, suitable for the cocktail hour as well as dinner.
